Proper Wiener Schnitzel should be made with very thin cut veal, with the cutlet opened with a butterfly cut, then breaded twice (flour, egg, breadcrumbs, egg, breadcrumbs) and then gently fried in a pan with clarified butter which makes it so that the meat and the breading aren't actually connected (like with deep frying).

Then serve with Viennese style potato salad (without mayonnaise but with beef bouillon) and green salad.

That's as close to a perfect meal as you can get. You simply can't improve upon that. Sadly, most restaurants even in Vienna take various shortcuts. It's hard to get a real Wiener Schnitzel while eating out, you have to make it yourself.
