In the U.S. and U.K., the mainstream Chinese food is the junk food versions of mostly Cantonese (Guangdong, geographic region surrounds Hong Kong) cuisine. In Korea, Chinese food is adaptation of mostly Shandong (area directly across the Yellow Sea from Korea) cuisine.

What is "Chinese food" like in your country? Are there countries where Sichuan or Jiangsu cuisine (which are considered the Four Great Cuisines in China along with Guangdong and Shandong) is the mainstream Chinese food?

Japanese Chinese has either completely been absorbed as native (say, ramen) or is pretty similar to American but without quite the emphasis on beef and brocc. Actually, a bunch of American Chinese, especially takeout fried rice for example with the egg added last to make it golden brown, seems to trace back to adaptions for prewar Japan.

This looks like what would happen if you tried to fry an egg on a wok.
