Let's talk soup. Is there anything you can serve with it other than bread?

Favourite recipes? Favourite ingredients? Comfiest times to eat it?

My most made soup is 321 potato leek soup:
3 Yukon gold potatoes
2 leaks
1 L of stock
(Some heavy cream after blending it)

This is the skeleton of the soup. I add different things every time I make it. Bacon and thyme are always a good bet though.

Just made some bean soup last night,
>Ham bone from easter
>Andoullie sausage
>1 large white onion, green bell pepper, and two celery stalks all diced
>four cloves of garlic minced
>darkred, kidney and great northern beans,
>1 thing of chicken stock
>a few tablespoons each of brown sugar, ketchup and mustard,
>salt pepper cayenne garlic powder onion powder smoked paprika and ground thyme
>two bay leaves
I let that shit simmer in a dutch oven for two hours and served with cornbread and a tall glass of milk, there's nothing comfier.

Soup is really it's own course, so it (traditionally) shouldn't be served with anything other than bread or toasted bread. It precedes a main course and shouldn't be considered a meal.

Corn chowder is a pretty good.
Nothing beats a rustic leek and onion soup topped with cheese though.

I got so far into soup one day that I started reading up on the history. The word comes from "sop", which now means to soak. In ye olde days people would eat sop which would be broth or stew with a large hunk of bread to eat it up with.

After that I started experimenting with soups and quality breads. Toasted or not, herb butters, and so on.
