Used this recipe:

https://www.seriouseats.com/recipes/2014/08/curried-jamaican-beef-patties-recipe.html

With a few modifications:

subbed in ground lamb

added 1/4 tsp msg

used 3 dried espelette peppers instead of a scotch bonnet

added about half a small bunch of chives

used 1/3 whole wheat flour in the dough

Does anyone even own 6 inch biscuit cutters? Largest I had is I think like a bit under 4 inches and the recipe made almost 25 of that size patties I think. Let the dough sit overnight if you have time.

Your dough doesn't look like it has the yellow color in it, like it should, and should be so flaky it is messy to eat, which is a reason why Jamaicans sandwich the meat pattie between coco bread.

I just happened to have ground lamb on hand. I wasn't going for perfect authenticity. I was going for deliciousness. It has curry powder in the crust, it just doesn't have a ton of turmeric added or yellow food dye to make it neon yellow.
