In general Americans and Mexicans don't drown their food in hot sauces. Sure there are examples of people doing this, but I haven't found it to be the norm. A hot sauce is usually a condiment, just like ketchup, it's supposed to be used sparingly. In fact most Americans don't really like spicy foods or sauces.

So far beyond "regular" hot sauces or peppers that it's pretty much cherry picking edge cases. Same goes for those google results. There are some stupidly hot peppers out there, and yes they can lead to harm. But again they are very far from what most people that like hot sauces would consider edible.
You are pretty much conflating someone drinking a beer with someone getting alcohol poisoning from drinking a bottle of Everclear. You also seem like the sort that would say a Jalapeno is too fucking spicy.

Tell that to all the japanese then, it must just be some western fad then rising up with the migrations and stuff. Maybe if I was born in japan this would be more common but unlike in north american japanese food is perfect. Usually never spicy, you have to ask for kimchi if you dare, rice cooked with sake to sweeten it, anything spicy has big red labels since everyone knows red means spice.
