We had two bags of sardines, seventy-five fillets of cod, five pounds of high-powered salmon, a saltshaker half-full of fish bouillon, and a whole galaxy of multi-colored trout roe, beluga caviar, sea urchin eggs, shrimp... Also, a quart of squid ink, a quart of shottsuru, a case of surströmming, a pint of raw garum, and two dozen trout. Not that we needed all that for the trip, but once you get locked into a serious fishe collection, the tendency is to push it as far as you can. The only thing that really worried me was the surströmming. There is nothing in the world more helpless and irresponsible and depraved than a fairy in the depths of an surströmming binge, and I knew we'd get into that rotten stuff pretty soon.

My guess is that you're giving any potentially undercooked egg some time to come up to temp without overcooking the rest.

I don't imagine there's a ton of validity to that but at least the dish will be more consistently heated when you dig in.

I'm thinking about doing the fisherman's eggs recipe with the twist of hot sauce in the fish, but I don't know how it would work.

So I had Sardines for the first time and they weren't bad at all.
They're definitely far from my favorite fish and I can see why some people are turned off (the smell when you open the can and the general messiness of them since one of my fillets still had discernible organs in it and they all had the incredibly soft spine)
6/10 would eat again and a premium brand could probably even be 7/10

I posted in another thread about deenz... just had my first can tonight. In tomato sauce. Wasn't super fussy about them. Bones are offputting and I took a look at one once I took a bite out of him and there was like a weird thing inside. Looked like it was a bunch of eggs or something. Ate it all anyway. I imagine it was a fish organ of some kind.
