Several reasons
Cause western countries (and lots of Asian ones) have shit Japanese food

when tourists come to Japan they eat at tourist traps and the food is shit and overpriced

Their palates are used to different kinds of food
For example Mexican people eat all kinds of spicy shit so they can’t appreciate Kyoto style food cause it’s bland to them
Most westerners hate fermented stuff like miso and soy sauce too

Living in Japan and you can see the same in a lot of Japanese people who are used to Japanese food, if foreign food isn’t adjusted to their palate they think it sucks.
