Umami ( = savory) is one of the basic flavors.
It has dedicated taste receptors, it's not a mix of flavors.
People think it's "salty" or w/e because it often comes mixed with salt and other things (e.g soy sauce, maggi).
Basically, "umami" is to MSG what "salty" is to salt.
