It's not hard.
My mother was a genteel southern white lady, and she made the best fried chicken. She'd brine the chickenbin seasoned salt water, the roll in seasoned flour, let sit so the breading stuck, then roll one more time before frying. And god help the person who tried to dip that chicken in a sauce of any kind without at least tasting it first. (And even after that, the family would scorn you a bit). Her fried chicken was always the most popular at church suppers, charity events, etc. She was a real socially southern butterfly.

Handling flavor with sauce is obviously better because then you can control how much flavor you want in each individual bite. You can't turn up the volume on flavor halfway through eating if you're relying on only what was done to the food during its preparation.
