Yeah, as a kid, Vegas wasn't necessarily the best yet, but it's evolved into a great culinary destination. Lobster tails in the 80s were shipped out in trucks and took 4 days to get here in 100 degree weather, but as the city evolved, you'll get fresher seafood than a restaurant on the water.

It also helped that I spent my summers in the Gulf Coast of Florida - my grandfather taught me to crab fish and prepare it, my cousin used to live in the LA bayou and does a better crawfish boil than anyone ever...

That's exclusive of my experiences on islands, or even just eating awesomely oily tinned fish.

It's rare as not even many Japanese people seem to like it, let alone Westerners. My first time tasting it was squatting behind the bar as the head chef handed it out because no one would buy it once we told them it was monkfish liver.

I've been to only a few places that sell it, and they tend to be located in heavily Japanese areas that don't really advertise as restaurants in the first place. Look for grocery stores or just Japanese bars as they know Westerners won't look for those. Hibachi is a redflag, as is, ironically, sushi, and trite, one word names like Oishi, Wasabi, or Sumo.

Not a single place knew what i'm talking about. My gf was sure i'm crazy until we managed to find it in Tokyo. Which was a miracle too because the season for it is very short and we just got lucky to be there during that time.

Seafood is great. Should try cooking it straight from the ocean. That's literally as fresh as you can get.
