The reason the pizza is floppy is because it's stretched too thin. If you've got to stretch out 1lb of dough to 16in you're going to end up with shit. If you need to stretch it that far, 1lb 8oz always does the trick.
The reason why it's always so floppy is because no one realizes how to really make pizza, in the same way no one realizes how to make many dishes. Pizza isn't just stretch dough, get sauce, cheese, toppings, and throw in the oven until it looks good, there's a science that goes into it, otherwise it wouldn't be cooking.
This is how places like Dominos can exist. Supply ingredients to monkeys, monkeys put together. It's literally easier than Lego
