Tired of spending an average of $10 by going out to eat for every lunch.

What do you pack for lunch?

I'm looking for something easy and able to be prepared in bulk in advance.

I've been working through some leftover enchiladas this week. Last week I did meatloaf. Before that I did some homemade pizzas. Little bit of salad on the side each time, some fruit, and a bottle of water. All three of those are pretty damn easy.

Get yourself an instant pot. You can quick prepare beans (even dried ones) in 1-2 hours with the pressure function, as well as tough cheap cuts of meat. I'm talking pulled pork in 65 minutes, beef/pastrami roasts in the same time using pretty much spices and some spare water/oil you have around the house. With the meat prepared you can save it in a tupperware and then mix up your prep with it over the week:

-Cold shredded beef/chicken/pork over mixed greens/veggies for salads or just meat and veggies if you don't want dressing

-Shredded meats can be used for almost any sandwich. I find good strong bread like whole wheat/pretzel, toasted followed by a slice of cheese and tomato and lettuce works great. Or a simple slaw of cabbage with oil and vinegar works too.
-The aformentioned beans and meat over instant mashed potatoes. Lots of fiber and protein to keep you full, while the potatoes provide carbs for energy.
-Wraps, shredded meat, beans and sliced veggies and/or cheese served cold should be easy to prepare, and then wrap in foil for later.
