I think you might be misunderstanding what "keto diet" means. It doesn't mean "eat a block of cheese" (although you can if you want to). It means "eliminate carbohydrates, eat a moderate amount of protein (typically 90-120g per day), and eat fats if you need more energy." Carbs is a limit, protein is a goal, fats are "as needed". The less fats you eat, the faster you will burn your own blubber (assuming weight loss is your goal).

I find that I am so not hungry thanks to keto that I usually only eat one meal in the morning, and then have something small late in the evening.

How long have you been doing this? I ditched carbs a few years ago. I never really did an aggressive calorie restriction, so it took a few years to lose 30 pounds of body fat. Must have been a very slight deficit that never built any food-related psychological hunger impulses in my brain. I kinda just listen to my body. I've found that during periods of greater physical activity, I crave more protein. I was recently sick and afterwards I had deep cravings for both more protein and more vegetables. My weight varies between 160-165 pounds. I can't really explain it. It's like just removing internal and external pressures about eating and slowly learning to do some kind of natural form of biofeedback. Obviously, you can't do this when you're eating addictive foods like refined sugars or flours that fuck with your hunger responses. But maybe just chill out and enjoy life and eating again?

I don't think it matters that much outside of treatment for a chronic disease or cancer cell growth suppression. I know excess protein is metabolically converted to glucose eventually, but in my experience, it takes literal pounds of excess protein to pull you out of dietary ketosis. I don't know how many grams of excess protein converts into how many equivalent grams of dietary carbohydrates, but unless you're very close to your daily carbohydrate limit it's probably a non-issue short-term.

Made nuggies the other day, put chicken breast pieces in some eggs, then coated the chicken with crushed pork rinds. I shallow fried it and god damn it was 10 times better than regular bread crumbs.
