Last night's dinner. Pulled beef tacos made from smoked chuck roast with pico de gallo and queso fresco. Also smoked some baby back ribs but left them on too long and they basically just fell apart so they look like shit. Still tasted great though. I'll probably end up pulling all the meat off the leftover ribs and making sandwiches or tacos with that sometime this week.

>1 cup + 1 tablespoon warm water
>1 1/2 teaspoons sugar
>1 1/2 teaspoons active dry yeast
>1 tablespoon olive oil
>3 cups flour
>1 teaspoon salt

I cheat with bread dough all the time and just use my machine for the kneading/proofing part, but the original recipe just says to knead until it's soft and barely sticky, then cover it and let it rise for an hour and a half. Cut it into 8 pieces, roll each into discs about 7 inches in diameter, then bake for 4 or 5 minutes in a 500 degree oven directly on the wire racks, two or three at a time. Make sure to cover them with a damp tea towel after you pull them out so they soften a bit.

From last night.

Prepped some okra by trimming the caps and soaking in apple cider vinegar for 30 minutes, drained and rinsed, pat dry, then dredged in buttermilk and a mixture of of cornmeal, flour, berbere spices, garlic powder, and salt, before deep-frying in oil.

Did the same thing with some nopales, except those I trimmed and then baked on a preheated castiron until mostly cooked, before dredging and frying.

Not pictured: had them with artichoke leaves and a burger of shredded king oyster mushrooms pulled-pork style.

King oysters shred really easy. Just cut the root off, then hold the cap with one fork and drag another fork through it away from the cap. That way, you can turn it into a whole bunch of shreds.

Take the shreds and then put them in a lightly oiled pan (pic related) over med-high to high heat and sautee until they're well browned, adding dry seasonings halfway through browning so they get fragrant.

Then, add enough BBQ sauce to coat, and reduce to low or med-low. Simmer until the shreds until desired softness; young, small king oysters are already more tender whereas you need like 25~ minutes of simmering for big, tough, old ones. They also get more tender just resting overnight in the sauce, i.e. the leftovers next-day will be more tender.

Make creme brulee, let cool overnight, save egg whites. Make(or buy, but making is better, I like Bruno albouze's recipe) panettone same day, next day cut in half from top to bottom, cut into two inch thick slices, take a knife and cut out a pocket in the center, stuff with creme brulee, coat in egg white and milk mixture, copious amount of butter on pan, fry up, top with mixed berries, thawed or fresh, as long as they're cold because it's a great contrast.

He did. He was going to hospital for some tests and I made him a bagged lunch.
That was a week ago and he's still there. They found a bunch of cancer in his kidney's and bladder and he was operated on today. I haven't heard from them after he was sent to the OR about 8 hours ago.
