Colbyjack is such a meme cheese.
>mixes two ok cheeses
>removes the best notes of each
>suburban moms think it's fancy

Everyone I've met who like colbyjack hasn't had either colby or m-jack separately and HARDCORE hates american cheese. Pretentious cunts.

Colby jack falls under the blanket of flavorless grocery store cheeses that are, like you said, absolutely loved by suburban mothers and Pinterest warriors. Same with mild cheddar, muenster, baby swiss, skim mozzarella, etc. They all provide a "creamy, mild" flavor which is worthless to me in the kitchen. Ironically, and also like you said, a cheap cheese that has more flavor and uses than all of these, American, is thought of as a cheap fake cheese, especially by people who love the cheeses I mentioned above. I'm talking about REAL American cheese like Land o' Lakes or Boar's Head, not Kraft Singles.

What's the difference?

Huge difference. Lots of info here: http://www.seriouseats.com/2016/07/whats-really-in-american-cheese.html

The takeaway is that real American cheese has cheese in it, at least 51%, whereas the singles are mostly milk. Flavor is totally different as well. The difference between the real and the singles is analogous to the difference between McDonald's and a home-grilled burger. Worlds apart.

Aren't single like 60% vegetable oil?
Basicly sliced margarine.

Those are mentioned, but Kraft Singles do actually contain a majority actual cheese vs other shit.
there's a lot of garbage without any meaningful amount of cheese being sold though
