basic white roux: medium heat 3tbsp butter/flour in a sauce pan then make a bechamel sauce by adding a 1+/- cup of milk
From there you can makes many things from nacho cheese to creamy soups or gravies (you can sub out butter for other fats like lard or bacon grease)

Dining alone is awesome; you can sit at the bar instead of waiting for a table, and unless the bartender is worth talking to, you can ignore people and read your fucking book. Or, if the dipshit next to you won't stop hitting on you or chatting with you, you can either have a conversation or take a break and ask a server to sit you down.

...and if you leave a decent tip (at least 20% for decent service) the bartender will remember you and treat you well the next time.

I can't even have a simple glass of wine at my local Italian place bar; the bartender keeps topping up my glass for free because I take care of him and he wants to take care of me. Shit's pretty awesome, actually.
