If you haven't seen it, this doc on the very first GMO crop marketed in the US during the early 90s actually was specifically designed to retain better flavor and freshness:

It failed due to backlash so we've been living with companies turning to quantity yield-centric GMOs marketed to producers instead of quality-oriented varieties for consumers ever since. The only similar endeavor are the tomato cultivar being bred by Dr. Harry Klee (using conventional cross-breeding techniques):

It's actually really sad in my opinion. Fresh tomatoes suck for 4/5 of the year.
