I bought a supermarket chicken and I want to make hainanese chicken rice but I'm a bit anxious about the cooking and cooling process
Should I keep the chicken on a low simmer for however long it takes to cook it?
I've seen some recipes that do this but others tell you to instead poach it
I'm happy with the first method but I'm anxious about poaching it
The recipe I have which tells you to keep it on a low simmer tells you to dunk the whole chicken in ice water and let it cool down but is that going to risk food poisoning? Is it necessary?
