Question for restaurant bros that has always been nagging at me

What is the procedure like in terms of timing with regards to what groups have ordered what.

For example, If I order veal and sauteed mushrooms, while my date orders Putanesca, I would imagine the Putanesca sauce is already made, and simply needs to be put over some noodles, while the veal will require more involved on the spot preparation.

How does timing of this nature work in restaurants, how much is premade.

Do you guys see what I'm getting at?
