>The grain in all states is a real crazy bet for our master roaster. It mixes three coffees with a unique process, from a single farm. It is with the Ferrufino family that we find these rare pearls. The secret of our daring blend? A mixture of three processes making the final taste complex, coming from the same farm to guarantee perfect homogeneity! The Ferrufino family has been growing coffee since 1992 on their “Aurora” farm, committed to supporting a local ecosystem.

>The grain comes exclusively from the Aurora family farm. It is in the heart of the Matagalpa region, between 1,200 and 1,400 meters above sea level, that Enrique Ferrufino manages the coffee culture with his family. Equity is a fundamental value for the family, which is why, since 2004, it has been committed to investing in fair wages, safer living conditions and education.

>/Our unique blend/
>Our No. 2 blend of Audacious Blends is based on three processes of the Parainema variety, still little known today: Honey, Natural and Washed. By bringing together three processes from the same farm, we obtain a coffee with a fruity and gourmet character, accompanied by pronounced aromas of red fruits. Finca Aurora is known for its extremely complex terroirs protected from high temperatures.

First sip today as an ristretto (1:1.6 extraction) no sugarn no milk.
Super tasty. The acidity is present and pleasantly balanced, the red fruits aromas are adjacent but really hard to discern what kind of red fruit with a ristretto. Will be brewed tomorrow as a café crème (1:10 extraction) as always. I suspect this "audacious blend" to be as complex and savory as the first one i tried, the "audacious blend n°3, Botanical Varieties" whose beans are also from my bro Enrique Ferrufino.
