I actually find the thimbleberry flavor pretty complex, moreso than most store variety berries. The sweet ones taste a bit like a mix of blackberry and raspberry after it's been cooked for a pie. Pretty annoying to eat since the seeds get stuck in your teeth, but easy to pick since there's no thorns on the plant
