Thank You! I like to make ham and green beans with meaty ham hocks/smoked shanks (pic related) but I was intrigued by the use of those dried-out smoked hocks. I have a smoked andouille sausage in mind. And Yes, green bell peppers suck ass. I always use a poblano as a substitute and maybe a jalapeno. The cornstarch thickening thing is something new to me but I'll give it a shot.

I make boxed Zatarains beans and rice. It's good but I've been wanting to make it from scratch and have some playtime in the kitchen.
