Italian food is quite literally the only aspect of Italian culture that matters to anyone outside of the boot itself. If you add cream to carbonara it is an insult to the very existence of an Italian because it means that you don't give a shit about the "authenticity" of the product and therefore don't give a shit about Italy in general.
