So many actual chefs believe this bullshit because they were told so in school.
How about getting two mushrooms, rinsing one of them, cooking them both, and finding out for yourself?
Fucking brainwashed sheep.
It's not even just a thing they believe quietly either. They get super passionate about it and start yelling about how "Oh God you're ruining the mushrooms! They must never touch water!!!"
