Another important thing: the container should not be open, cover it with a lid. Big tupperware containers are good for this. Otherwise you risk flies and bugs laying eggs in your Nukamiso. Airing is twice a day in summer. If the smell is REALLY sour you've already fucked up, you may add a caustic agent like powdered eggshells.
