Italian here, can i ask where did you get the pizza?
I would honestly say the smaller the restaurants the better they become.
Also as you go south the food generally gets better, even if literally everything else doesn't.
Don't go in a tourist-heavy city and expect good or reasonably priced food, unless you know someone who lives there.

Here's what you might expect from a shitty place, usually the cooks are egyptians, low price, medium-shitty pizza, low price, they use some kind of packaged pre-cut pieces of "cheese"

Pic related instead is the traditional kind, burnt leaves apart. chunkier pieces of cheese, more sauce, of a deeper red colour
