Ah, this is an easy one!
Let's go through salts mechanisms of actions one by one:

Bitterness:
Salt reduces bitterness, literally at the receptor level!
Bitterness, for whatever reason, depends on activation of the total aggregate of receptors, unlike umami and sweetness.
Think of bitterness like a gauge from 0 to 100, and every receptor throws in a little bit of "we're bitter"ness onto that gauge, unlike sweetness where a single receptor screaming "I'M SWEET" will get a sweet reaction.
The sodium in salt (sodium chloride) seems to literally fit into the allosteric site of the receptor, preventing it from triggering like keeping your hand on a door knob!
