Sounds awfully simplistic, anon. You done goofed.

To kill bacteria you need to consider both time as well as temperature. You can easily look this up: google "pasteurization chart". Notice that the charts/graphs give both a time and a temperature, such as pic related.

Notice that even water at a mere 130F will kill salmonella, it just takes a long time! But water at 145F will kill it in just a few minutes--and that's about right for soaking dishes in a sink full of hot water, then rinsing them.
