Okay, so here's the deal. I've picked up 3 thick ribeyes to cook for a lady friend and her kid. I make a badass steak. i've cooked for her before she said it was literally the best steak she's ever had. Anyways, this time I want to try aging I've never done it before and have some serious questions. First off what's the best method dry or wet and why? How long should I do it for? Is there any risk to the child from bacteria or whateves? Is it worth all the hassle? And can/should I marinate afterwards?

tl;dr Aging steaks. Help please.
