Man I dated a Norwegian girl and I don't even know what Norwegians eat besides tacos on Friday. I like eggs Norwegian but I suspect those aren't actually Norwegian.

The main answer is that Nordics, in particular Norwegians, are culturally minimalist to the point that they don't see the point of rich foods. In fact, the reason tacos became a friday thing in the 90s was because the workweek was over and it was more acceptable to indulge a little bit. I live in Minnesota and there are pretty much ZERO Norwegian restaurants, though there are clubs where people dress up to eat lutefisk but it isn't a cuisine that can survive on the open market. we have 'Taste of Scandinavia' which are mostly just bakeries with pancakes.

We DO have a Finnish restaurant, though, and I have read about Finnish food, saw something I wanted to try, looked up the recipe and made it myself. Pic related- Lohikheitto I made, served with Khachapuri (not Finnish).
