manager/shift lead didn't predict demand well enough. Company policy is to wash the fries and then fill big ass buckets with fries and water and put it in the fridge until it's needed.

Shoestring staffing means you can't send someone off the line to keep the stock in the fridge up throughout the day, so they run out of thoroughly washed fries after the first lunch rush and then everyone else that day just gets shitty fries with none of the starch washed away.
