>mfw Italians try to convince me their pizza is the only valid one
Any good pizza experience in Italy is copied from someone else doing their methods in a good way, or better ingredients, or longer aging of the 0dough, and/or copying how it's done in some other country. The origin and authentic argument, at this point is ignorance and stupidity. I am sure there is deliciousness at restaurant x in city x, because people in the restaurant business are competitive as a matter of necessity.
It's already documented that New Haven CT made what we consider pizza in this country first. Coal fired delicious dough, fresh made tomato sauce, etc. Frank Pepe, Sal's and others such as The Bar (across the street from the first hamburger incidentally), are still delicious, and everyone will say they slightly prefer one over the other as their best.
Clam pizza, amazing. Potato on pizza, also delicious. To add cheese or no cheese, boggling to me, but they do that over in Italy too.
