This one seems more reasonable. Light green is 10kg of cheese or less, which is https://www.costco.co.uk/medias/sys_master/products/hc5/hf0/10035271041054.jpg - that wheel serves 95-100 people.
Though Spain being less than 10kg seems kind of weird. I'd expect it would be 10-20kg, since Egypt would be consuming more cheese than Spain and that's unthinkable.

The greys also are just lack of information, as across the board when it comes to dairy the Sudan always shows up high on the list. Hell, another map of "Top 5 milkl consuming countries per capita" has the Sudan with a higher milk consumption than the United States.

I'm biased because I never liked milk but I'd disagree. Cheese-consumption is thoroughly normal and was done by (at least in ancient times) probably over half of the world population given it was the norm for Europe/West Asia/India/North Africa/Sudan. It's milk consumption which was both more widespread in some cases (Mongols/Turks) but also less widespread (outside of Mongol/Turkic influence Middle east never really drank milk drinks that I can think of.).

But some sort of lactose be it cheese or yogurt is normal for Europe/West Asia/India/North africa/Sudan. Until modern times and major population booms in Africa and North America that's easily at least 1/3rd of the world population compared to China/East Asia and the Americas, and it;'s probably closer to half the world population next to China and the rest.

So it's definitely normal.
