So I'm venturing through unknown ground here and could use a little input.

My neighbor shot a deer and has offered me some of the meat to cook in my smoker. Only problem is the smoker was a gift and I haven't used it yet and I've never worked with venison.

I've eaten and enjoyed venison before but never smoked and I've heard venison is a real bitch to smoke right. I've heard you need to brine it and I've heard to cram it full of bacon but I'd like to keep the deer meat as simple as I can to preserve the venison flavor.

Does anyone have any input on this particular situation?

I got some venison backstraps recently and was wondering what to do with them. I've had venison chilli before and it was really good, but would backstraps be appropriate for that?

Hey /ck/. I've been trying to explore healthier options for food and in particular I've been looking at trying venison for the high protein and low fat. I've never cooked with it before though, and I'm aware of the possibility that it might be a bit dry if I don't treat it right.

Can /ck/ offer any advice for cooking venison? Am I right to be concerned or should I just treat it like an ordinary steak?

Also, similar question for chicken breast. Usually I eat legs, because the skin and cartilage are my favourite parts and I've always found breasts to be horribly dry and flavourless, but they're healthier. What am I doing wrong with breasts?
