Sorry it looked like you were highlighting the grooves, not the apex. Deeper grooves/different pitch would just affect the feed rate. That little bottom "U" compared to "V" isn't whats doing the cutting, thats the feed into the finishing teeth. I'm not trying to make any judgements on either burr set, I'm just pointing out they're visually similar, but not quite exact. 1zpresso says that difference is creating more fines.
