based year round soup/stew enjoyer. I've never made turkey before, only poultry dishes were tom kha gai and coq au vin (was good but boeuf bourguignon is my preferred way with those ingredients). I shall try da pan ji next as it's amazing yet I've never seen it truly slow-cooked.

Try eggplant gratin. It's easy as hell and tasty.

Otherwise just make grilled zucchini with or without garlic butter, or brussell sprouts with olive oil and balsamic. Don't be afraid to just use them in meat dishes, they don't need to be a dish or side dish on their own. Think Da pan ji (big plate chicken), stews, braises etc.
