Made some chicken and rice in my new pan and it turned out pretty well
>3 chicken thighs bone in, skin on
>season, I did S&P and Tony Chachere’s
>skin side down with a little oil
>cook until some of the fat renders and it gets a little color
>flip and throw into 400F oven for like 15-20 mins
You could stop here and do whatever you wanted actually, I ended up with a big pool of chicken fat in the pan
>remove chicken, wrapped in foil to rest
>back on the stove
>toss in bag of vigo yellow rice and water
>cover, cook, throw the chicken back in, done
I’m gonna try a paella type thing next where I bake the chicken and rice in the oven together and see how that goes
