That's not "clever" but unsanitary.
Half of the time, cutting boards as plates are unsanitary as well. Slabs of pink himalayan salt...what, wiped clean from the last guest? Baking cast iron with eat-in-place baby pies? Slate as a serving board for charcuterie? If you see gouges, and they can't dip it in bleach? No, just give me china that was steamed. Those plastic red baskets with just one paper in there? And, the paper is soaked in grease and torn on the bottom? Yea, it's touching a dirty plastic bowl the last customer touched.
I don't care for a jelly roll pan as rustic as a platter unless in an actual BBQ joint selling meat by the pound, and then it's because they are placing that big tray on the scale and adding slices of brisket, then mound up the sides along side it. If you're doing that back in the kitchen to be cute? No. If the cutting board can't catch juices with a well, and you have steak drippings all over the tablecloth? Stop being dumb, chef.
