I plan on either making my own carne asada or my lemon and onion fried chicken thighs.

Depending on whether or not there happens to be a special on beef flank that week. (Which I'm not counting on.)

Only works when you simmer with something fatty like whole chicken thighs.

I left these covered in a skillet for 30 mins, low heat, in a bath of cheap chardonnay and lemon juice.
Would've turned out crispy had I chucked them in the oven instead, but the damn thing was broken.

Lightly battered chicken thighs slow cooked (fried?) in olive oil, onions, and chardonnay.

Normally, this sort of thing would have a crispier, roasted texture, but I settled for 30 minutes of it simmering on the stove (at low heat) because my oven is broken.

On the side: brown rice topped with a mushroom and parsley cream. I went overboard on the parsely, I know.

Looks like shit, but I made it and it was good.
