Also I feel like a lot of cooks and chefs have been doing intentionally non kosher Israeli food. I ran a special a couple months ago that was bacon fat seared scallion and sage latkes with a a few petite filet mignon slices propped up on the latke pyramid next to a salad of grilled asparagus and toasted pinenuts tossed in a fennel infused sesame oil and all topped with a black sesame-Marcona almond tahini. I wish I got s picture of that shit. I sold about 27 of those plates in one night most of them being sold in a thirty minute span.
