Yeah doing that made my mashed potatoes taste better.

I like to make fish cakes with mine. I bake some fish(tilapia, crappie, whatever i got) with lemon and olive oil, then i make a patty with the baked fish, shredded potato, an egg and some bread crumbs. I add bell pepper and cajun seasoning and air fry it like a salmon croquet. Really good with some homemade tartar sauce or roumelade. I like the way the air fryer crisps it up.
