Oh, that's easy.
The "Grill" in grilled cheese, comes from "Plancha Grill", which is a cooking tool in restaurant kitchens. Some people call them "griddles". The name "grilled cheese" came from back in the day when people would order them in diners. Since most people don't have plancha grills/griddles at home, they use a pan instead.

I thought that was common knowledge?

The confusion comes from people who aren't familiar with the jargon used in pro kitchens and think that a "grill" refers to what they cook hot dogs and steaks on in their backyard.

Yep. the term comes from diner slang. The flat-top in a diner or restaurant kitchen is also called a "plancha grill". The name comes from that, not what the average person thinks of when they hear the word grill.
