i found out the secret to eating healthy. basically you just have to eat “wet” food. potato chips for example are bad for you but mashed potatoes are good for you even though they are essentially the same thing. also its best to eat meat as rare as possible because cooking dries it out. vegetables should be steamed or boiled instead of roasted because it keeps them wet. this concept applies to all food. you cannot prove me wrong. milk is really healthy because it is liquid food

I get the occasional craving for steak tartare. A few places in my city have it on the menu and I make some myself. One thing that has puzzled me is how rarely people tend to get experimental with it. You get your raw beef, onion, capers and egg yolk. Even the presentation rarely varies.
Not that I'm bored, but how would you alter this classic? Or is it one of those minimalist dishes where any variation will just make it worse somehow?
