With steak most of the harmful shit stays outside the muscle, but when you grind it up, all the harmful shit gets mixed all around.

That's why ground minced beef needs to be cooked through, but steak can be only cooked on the outside.

My fiance eats raw beef sometimes, like just a seasoned bite, she's done it her whole life, I just tell her not to let our kids do it. I'm really surprised she's never had worms or ecoli poisoning.
