You will need a candy thermometer or deep fat frying thermometer for this
If you buy a whole chicken and cut it up yourself try to get one under 4 1/2 pounds or even slightly under four pounds if you can
after you have all the pieces you are going to prepare take about a cup and a half of flour and mix in course ground black pepper, ground white pepper and celery salt. don't use too much just a teaspoon and a half of each at the most
Dip the pieces in the mixture until it is completely covered and set aside
Mix in a cup of instant mashed potato flakes with the flour
Take three or four separated egg whites and beat them with a hand mixer until they just start to form peaks
Drop the chicken in the egg until it is soaked all the way around and then take out and immediately back in the flour mixture until covered completely
Heat a large pot of vegetable oil to about 300 F and put the pieces in one at a time being sure it doesn't boil over and burn your house down
Turn the temperature down as you are putting the pieces in so it doesn't spike up and try to keep it as close to 300 as possible the whole time
After everything is in don't touch it at all for like three minutes but after that start moving the pieces around every couple of minutes so the pieces closer to the bottom don't burn
Don't put so much in there so you can't move the pieces around or the pieces stick together
Cook for 18 minutes, slightly less for small pieces like wings and a little longer for breasts
