I don't cook any more, so I can just give it to you straight. I worked at Spiaggia in Chicago, a 1 Michelin-starred Italian restaurant. We had this ridiculous wagyu from the top prefecture in Kobe. $140 dollar steak or whatever, 6 or 8 oz portion. Anyway, some fuckass sends their plate back. It wasn't the temperature, it wasn't the seasoning-- no, it was that the beef was too fatty.
