so what makes undercooked/rare beef so special vs undercooked/rare pork, chicken, lamb, etc

How can you tell when steak is done? Getting a temperature reading is too slow. I know some cooks can do it by feel, but I have no idea what rare or whatever is supposed to feel like. I usually just end up cutting it in half in the pan so I can look at the middle. Is there a better way? Ngl, I've got a thick NY strip in the fridge, but I don't cook steak very often so I'm a little intimidated.

It is a universal truth that is self-evident that meat tastes better, smells better and has a nicer, more tender and juicy texture when cooked.

So why is it that most people believe the exact opposite? Where has this extreme case of the emperor's new clothes come from, which causes people to deny the evidence of their eyes and ears?

The answer is simple. Peer pressure. Fear of ostracism. Groupthink. Desire to conform. Most people as children prefer cooked meat and will naturally turn up their nose at a gelatinous piece of bright red chewy cold metallic-tasting undercooked meat.

But at some point, this idea of it being cool to like rare meat and being cringe to have it well done appears. You're a real man aren't you? You don't want to be a baby/woman. So people force themselves, and convince themselves that they like it. They might even believe it, eventually, and join in on the making fun of anyone who doesn't eat their meat rare. It's like being in a cult.

What's really going on is everyone is infested with parasites, which change your behaviour and make you interested in things which aren't good for you but which are good for the parasite, such as eating undercooked meat, taking risks, and sexual degeneracy - butt stuff, exchanging of bodily fluids, homosexuality and trans, etc.

Today is the day you should take anti-parasiticals and then try some tasty cooked meat, which has undergone the Maillard reaction to give it the delicious umami flavours and the divine smell of cooked meat that humans innately love, as well as being softer, more juicy, and less chewy because the proteins have broken down and the fat has melted into meat.

Why is everyone really cautious when it comes to food safety and sees that raw, undercooked meat is really unsanitary and dangerous UNLESS it's fucking steak or similar and people get autistically mad at you for actually wanting it properly made and safe?

I don't get the hype for steak. Is it only a white people thing? I've tried steaks many times while out with people or cooked at home, and every time it was horrible. Chewy, salty, gritty, and bland beyond belief, no matter if it's rare or medium rare. I'd prefer the mashed potatoes and salad that comes along with it. I've tried The Keg twice and ordered sirloin, and they were both fucking terrible.

How bad is gone off steak? About to cook two steaks with the use-by date being the 12th May; visually it looks fine but I'm not 100% on the smell.

I'd say it has a very slight smell of milk, but it's only very slight and only if I bring my nose right up to it. Not sure if that's me being paranoid or an actual sign it isn't safe to eat.

Everything below medium well is a faggy European meme. The meat is supposed to be cooked.

I've never cooked a steak in my life. I rarely even cook, but I want to buy one and try to cook it myself.
How should I cook it?
