Depends on the cut, really. I let this skirt steak go a little longer than I should have but it was still tasty and edible. I don't think I would say the same of a NY strip of ribeye.

Greetings from China, /ck/!

I have been investigating Chimichurri as a condiment for meat. Here in China, I was able to procure all the necessary ingredients. Parsley, garlic, red onion, olive oil, salt and pepper. Mixed together it was amazingly flavorful.

Next, the meat. I used water buffalo, and what resembled, almost, skirt steak. Seared in a hot pan and then sliced and drizzled with the chimichurri. A little piece of South America! Mmmmmm...
