Bicol Express (pork or chicken cooked in a coconut sauce) is great. Sinigang is a tamarind base soup that pairs well with salmon or shrimp. If they have fried bangus (milkfish), try that, too. Lumpia is basically eggrolls, but a mixture of lettuce and ground beef.

Also I like these longaniza sausages, but apparently Mexican chorizo are pretty much the same thing.

Eh, I think that's pretty common across SEA food. You're right about the general saltiness, though. As much as I love Filipino food, so much of it is salty or greasy.
