I'd suggest portabella caps, or grilled corn and tomatoes, or vegetarian kebabs, but they all require the grill.
You can't cook vegan food on the same grill that you cook meats, because it'd be contaminated with the smoke and residue of animals who suffered.

So your only real option is cold, pre-prepped stuff. But no potato or pasta salads, since they use mayonnaise or even EGGS (yuck!).
A safe bet is a package of rice cakes, a jar of peanut butter (MAKE SURE IT SPECIFIES VEGAN SUGAR), and a bag of baby spinach.
